Ingredients
- 1 tablespoon olive oil
- 0.5 pound ground beef (lean)
- 0.5 yellow onion (chopped)
- 2 clove garlic (minced)
- 0.5 cup tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1.5 cup beef broth
- 14.5 ounce diced tomatoes (undrained)
- 4 ounce spaghetti (broken into thirds)
- 0.25 cup Parmesan cheese (grated)
- 2 cup baby spinach (pre-washed)
- 2 slice garlic bread
Instructions
- Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add ground beef and chopped yellow onion, cooking until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in minced garlic, tomato paste, dried oregano, salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in the beef broth and canned diced tomatoes (undrained). Bring to a simmer. Add the broken spaghetti, making sure it is mostly submerged in the liquid. Cover and reduce heat to medium-low. Cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
- Stir in the baby spinach until wilted. Remove from heat and stir in grated Parmesan cheese.
- While the pasta cooks, prepare the store-bought garlic bread according to package directions. Serve the skillet beef pasta immediately with garlic bread on the side.
Notes
You can add other vegetables like bell peppers or zucchini during step 1 for added nutrients and flavor.
