- 1 tablespoon olive oil
- 1 pound ground beef (90/10)
- 1 yellow onion (chopped)
- 1 green bell pepper (cored and diced)
- 2 clove garlic (minced)
- 1.5 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 15 ounce black beans (rinsed and drained)
- 1 cup frozen corn
- 0.5 cup tomato sauce
- 0.25 cup water
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 whole grain tortillas (warmed)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add the chopped yellow onion and diced green bell pepper to the skillet. Cook for 5 minutes, stirring occasionally, until softened.
- Stir in the minced garlic, chili powder, ground cumin, and dried oregano. Cook for 1 minute until fragrant.
- Add the rinsed black beans, frozen corn, tomato sauce, and water. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, allowing flavors to meld and sauce to thicken slightly.
- Serve the skillet mixture hot with warm whole grain tortillas, allowing each person to build their own.
Notes
For a touch of freshness, top with a sprinkle of fresh cilantro. Sour cream or Greek yogurt can be offered as optional toppings.
