  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add the chopped yellow onion and diced green bell pepper to the skillet. Cook for 5 minutes, stirring occasionally, until softened.
  3. Stir in the minced garlic, chili powder, ground cumin, and dried oregano. Cook for 1 minute until fragrant.
  4. Add the rinsed black beans, frozen corn, tomato sauce, and water. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, allowing flavors to meld and sauce to thicken slightly.
  5. Serve the skillet mixture hot with warm whole grain tortillas, allowing each person to build their own.

Notes

For a touch of freshness, top with a sprinkle of fresh cilantro. Sour cream or Greek yogurt can be offered as optional toppings.
