Ingredients
- 1 tablespoon olive oil
- 12 ounce ground beef
- 1 yellow onion (small, diced)
- 1 bell pepper (diced)
- 1.5 cup diced potatoes (pre-cooked)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 ounce green beans (fresh or frozen)
- 2 eggs
Instructions
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add diced yellow onion and bell pepper to the skillet. Cook for 3-5 minutes, until vegetables start to soften. Stir in diced pre-cooked potatoes.
- Stir in chili powder, ground cumin, garlic powder, salt, and black pepper. Mix well to coat everything, then continue to cook for 5-7 minutes, allowing potatoes to crisp slightly. While the hash cooks, steam or microwave green beans according to package directions.
- Meanwhile, in a separate small non-stick pan, fry 2 eggs to your desired doneness (sunny-side up, over easy, etc.).
- Serve the skillet beef and potato hash immediately, topped with a fried egg and a side of steamed green beans.
Notes
For an extra kick, add a dash of your favorite hot sauce to the hash before serving. Any leftover hash is delicious for breakfast the next day!
