- 1 pound ground beef (lean)
- 0.5 cup yellow onion (diced)
- 0.5 red bell pepper (cored, diced)
- 1 clove garlic (minced)

- 0.5 cup beef broth
- 1 can black beans (rinsed, drained)
- 0.5 cup frozen corn
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup brown rice (uncooked)
- 2 cup water
- 0.25 cup fresh cilantro (chopped)
Instructions
- First, prepare the brown rice: In a small saucepan, combine 1 cup brown rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until water is absorbed and rice is tender. Fluff with a fork.
- Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add 1/2 cup yellow onion and 1/2 each red bell pepper to the skillet with the beef. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften. Stir in 1 clove garlic, 1/2 teaspoon ground cumin, and 1/4 teaspoon chili powder; cook for 1 minute more until fragrant.
- Pour in 1/2 cup beef broth, scraping up any browned bits from the bottom of the skillet. Stir in 1 can black beans and 1/2 cup frozen corn. Bring to a simmer and cook for 5-7 minutes, until the sauce thickens slightly.
- Season the beef and bean mixture with salt and black pepper to taste. Serve hot over the prepared brown rice, garnished with 1/4 cup fresh cilantro if desired.
Notes
