Instructions
- Cook white rice according to package directions. (Typically 1 cup rice with 2 cups water, brought to boil, then simmered covered for 15-20 minutes).
- While rice cooks, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add yellow onion, green bell pepper, and garlic clove to the skillet with the beef. Cook until vegetables are softened, about 5 minutes.
- Stir in chili powder, ground cumin, kosher salt, black pepper, black beans, frozen corn, and water. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- Serve the beef and bean mixture over the cooked white rice, garnished with fresh parsley if desired.
