Skillet Bean and Cheese Quesadillas

  1. In a medium bowl, slightly mash the rinsed black beans with a fork or potato masher. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add finely chopped yellow onion and minced garlic; cook until softened, about 3-4 minutes.
  3. Stir in the mashed black beans, ground cumin, chili powder, and salt. Cook for 2-3 minutes, stirring, until heated through. Remove from heat.
  4. Wipe the skillet clean. Place one flour tortilla in the dry skillet over medium heat. Sprinkle half of the shredded cheddar cheese over the tortilla. Spoon half of the bean mixture onto one side of the tortilla.
  5. Once cheese is melted and tortilla is lightly golden, fold the other half of the tortilla over the filling to form a half-moon shape. Cook for another 1-2 minutes per side until golden brown and crispy.
  6. Remove from skillet and repeat with the remaining tortilla, cheese, and bean mixture. Cut each quesadilla in half and serve immediately with mild salsa and sour cream if desired.

Notes

For extra kid-friendliness, reduce or omit the chili powder. You can also add a pinch of garlic powder to the beans for more flavor.
