  1. In a medium bowl, combine sirloin steak slices with chili powder, ground cumin, smoked paprika, garlic powder, onion powder, black pepper, and kosher salt. Squeeze in the juice from 1/2 lime and toss to coat evenly. Let marinate for at least 15 minutes at room temperature, or up to 30 minutes.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
  3. Add sliced yellow and red bell peppers and yellow onion to the skillet. Sauté for 5-7 minutes until vegetables are tender-crisp and slightly charred. Remove vegetables from the skillet and set aside.
  4. Increase heat to high. Add the marinated steak to the hot skillet in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary). Sear for 2-3 minutes per side for medium-rare, or longer for desired doneness.
  5. Return the sautéed vegetables to the skillet with the cooked steak. Toss everything together briefly to combine and heat through.
  6. Serve the sizzling steak fajita skillet immediately, topped with sliced avocado and fresh chopped cilantro. Enjoy as a bowl or with low-carb tortillas/lettuce wraps.

Notes

To further enhance flavor, let the steak marinate for an hour or two in the refrigerator. Use a very hot cast iron skillet for the best sear on the steak.
