Instructions
- In a large bowl, toss 1 pound shrimp with 1 tablespoon olive oil, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper until evenly coated.
- Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot. Add the sliced red bell pepper, green bell pepper, and yellow onion. Cook, stirring occasionally, for 5-7 minutes until the vegetables are tender-crisp and slightly charred.
- Push the cooked vegetables to one side of the skillet. Add the seasoned shrimp to the empty side of the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- Once the shrimp is cooked, squeeze the juice from 1 lime over the shrimp and vegetables. Stir to combine.
- Warm the flour tortillas according to package directions. In a small saucepan, gently warm the canned refried beans over low heat, stirring occasionally, until heated through.
- Serve the sizzling shrimp and vegetable mixture immediately with warm flour tortillas, prepared salsa, prepared guacamole, and warmed refried beans. Enjoy while still hot and sizzling!
Notes
You can add a pinch of cayenne pepper to the seasoning blend for extra heat, if desired. For the best flavor, use fresh shrimp and high-quality, ripe avocados for the guacamole.
