  1. In a large bowl, toss 1 pound shrimp with 1 tablespoon olive oil, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper until evenly coated.
  2. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot. Add the sliced red bell pepper, green bell pepper, and yellow onion. Cook, stirring occasionally, for 5-7 minutes until the vegetables are tender-crisp and slightly charred.
  3. Push the cooked vegetables to one side of the skillet. Add the seasoned shrimp to the empty side of the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  4. Once the shrimp is cooked, squeeze the juice from 1 lime over the shrimp and vegetables. Stir to combine.
  5. Warm the flour tortillas according to package directions. In a small saucepan, gently warm the canned refried beans over low heat, stirring occasionally, until heated through.
  6. Serve the sizzling shrimp and vegetable mixture immediately with warm flour tortillas, prepared salsa, prepared guacamole, and warmed refried beans. Enjoy while still hot and sizzling!

Notes

You can add a pinch of cayenne pepper to the seasoning blend for extra heat, if desired. For the best flavor, use fresh shrimp and high-quality, ripe avocados for the guacamole.
