- 4 ounce chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon cornstarch
- 0.5 tablespoon olive oil
- 0.25 red bell pepper (thinly sliced)
- 0.25 yellow bell pepper (thinly sliced)
- 0.25 carrot (thinly sliced or julienned)
- 0.25 cup jasmine rice
- 0.25 cup water
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 0.5 teaspoon fresh ginger (grated)
- 1 clove garlic (minced)
- 0.125 teaspoon red pepper flakes
Instructions
- Cook 1/4 cup jasmine rice according to package directions. Keep warm.
- Toss 4 ounces chicken breast pieces with 1 tablespoon cornstarch until coated.
- In a small bowl, whisk together 1/4 cup water, 1 tablespoon soy sauce, 1 tablespoon honey, 1 teaspoon rice vinegar, 1/2 teaspoon grated fresh ginger, 1 clove minced garlic, and 1/8 teaspoon red pepper flakes (if using). Set aside.
- Heat 1/2 tablespoon olive oil in a skillet or wok over medium-high heat. Add chicken and cook for 3-4 minutes until lightly browned and mostly cooked through. Remove chicken from skillet and set aside.
- Add sliced red bell pepper, yellow bell pepper, and carrot to the same skillet. Stir-fry for 3-4 minutes until crisp-tender.
- Return chicken to the skillet with the vegetables. Pour in the prepared sauce. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
- Serve immediately over the cooked jasmine rice.
