Sizzling Honey-Garlic Chicken Stir-Fry

  1. Cook 1/4 cup jasmine rice according to package directions. Keep warm.
  2. Toss 4 ounces chicken breast pieces with 1 tablespoon cornstarch until coated.
  3. In a small bowl, whisk together 1/4 cup water, 1 tablespoon soy sauce, 1 tablespoon honey, 1 teaspoon rice vinegar, 1/2 teaspoon grated fresh ginger, 1 clove minced garlic, and 1/8 teaspoon red pepper flakes (if using). Set aside.
  4. Heat 1/2 tablespoon olive oil in a skillet or wok over medium-high heat. Add chicken and cook for 3-4 minutes until lightly browned and mostly cooked through. Remove chicken from skillet and set aside.
  5. Add sliced red bell pepper, yellow bell pepper, and carrot to the same skillet. Stir-fry for 3-4 minutes until crisp-tender.
  6. Return chicken to the skillet with the vegetables. Pour in the prepared sauce. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
  7. Serve immediately over the cooked jasmine rice.
