Instructions

  1. Place the sweet potatoes into a large pot of water, bring to a boil over high heat, and cook for 12 minutes until fork-tender; drain and mash with 1 tablespoon of the butter, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon of the black pepper.
  2. While potatoes boil, steam the broccoli florets in a covered skillet with 1/4 cup water over medium heat for 5 minutes until tender-crisp, then season with 1/4 teaspoon kosher salt.
  3. Pat the sirloin steaks dry with a paper towel and season both sides evenly with the garlic powder, remaining 1/4 teaspoon kosher salt, and remaining 1/4 teaspoon black pepper.
  4. Heat the olive oil in a large cast iron skillet over medium-high heat for 2 minutes until shimmering.
  5. Add the steaks to the hot skillet and sear for 4 to 5 minutes per side for medium-rare (internal temperature of 135 degrees Fahrenheit), then remove from heat, top with the remaining 1 tablespoon butter, and let rest for 5 minutes before slicing.
  6. Divide the sliced sirloin, mashed sweet potatoes, and steamed broccoli among plates and serve warm.

Notes

Letting the steak rest for a full 5 minutes before slicing keeps the meat exceptionally juicy.
