  1. Heat 1 tablespoon olive oil in a large skillet or pot over medium heat. Add the 1 1/4 pounds chicken breast pieces, 1/2 teaspoon salt, and 1/8 teaspoon ground black pepper. Sauté for 5-7 minutes until lightly browned on all sides and cooked through.
  2. Pour in 15 ounces tomato sauce and 1/2 cup chicken broth. Stir well, bring to a gentle simmer, then reduce heat to low, cover, and cook for 10 minutes, allowing flavors to meld.
  3. While chicken simmers, combine 1 1/2 cups uncooked white rice, 3 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  4. Season the chicken and sauce with remaining 1/4 teaspoon salt and 1/8 teaspoon ground black pepper.
  5. Serve the simple tomato chicken over the fluffy white rice.
