Ingredients
- 1 tablespoon olive oil
- 1.25 pound ground beef (85/15 or 90/10 lean)
- 1 yellow onion (chopped)
- 2 carrots (peeled and diced)
- 2 clove garlic (minced)
- 1 cup mixed vegetables (frozen)
- 1.5 cup beef broth
- 1 tablespoon all-purpose flour
- 1 tablespoon Worcestershire sauce
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 3 cup instant mashed potatoes (prepared)
- 0.5 cup shredded cheddar cheese (for topping)
- 1 package frozen green beans
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain any excess fat.
- Add chopped yellow onion and diced carrots to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Sprinkle all-purpose flour over the beef and vegetable mixture, stir for 1 minute. Gradually whisk in beef broth and Worcestershire sauce until smooth.
- Stir in the frozen mixed vegetables, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and cook for 5 minutes until slightly thickened.
- Prepare instant mashed potatoes according to package directions. Spread the prepared mashed potatoes evenly over the beef mixture in the skillet. If desired, sprinkle with shredded cheddar cheese.
- Place the skillet under the broiler for 3-5 minutes, or until the mashed potatoes are golden brown and slightly crisp. While pie broils, microwave or steam frozen green beans according to package directions.
- Let stand for a few minutes before serving with the green beans on the side.
Notes
You can add a dash of paprika to the mashed potato topping for extra color before broiling. The pie can be made ahead and reheated.
