Simple Skillet Shepherd's Pie

  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain any excess fat.
  2. Add chopped yellow onion and diced carrots to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle all-purpose flour over the beef and vegetable mixture, stir for 1 minute. Gradually whisk in beef broth and Worcestershire sauce until smooth.
  4. Stir in the frozen mixed vegetables, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and cook for 5 minutes until slightly thickened.
  5. Prepare instant mashed potatoes according to package directions. Spread the prepared mashed potatoes evenly over the beef mixture in the skillet. If desired, sprinkle with shredded cheddar cheese.
  6. Place the skillet under the broiler for 3-5 minutes, or until the mashed potatoes are golden brown and slightly crisp. While pie broils, microwave or steam frozen green beans according to package directions.
  7. Let stand for a few minutes before serving with the green beans on the side.

Notes

You can add a dash of paprika to the mashed potato topping for extra color before broiling. The pie can be made ahead and reheated.
