Ingredients
- 1 tablespoon olive oil
- 1.5 pound ground beef (85/15 lean)
- 0.5 cup yellow onion (diced)
- 2 clove garlic (minced)
- 2 tablespoon taco seasoning
- 0.5 cup water
- 1 can black beans (rinsed and drained)
- 14 tostada shells
- 1 avocado (diced)
- 1 cup salsa
- 0.5 cup shredded cheddar cheese
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 1/2 pounds ground beef and 1/2 cup diced yellow onion. Cook, breaking up the beef with a spoon, until browned and no longer pink, about 7-8 minutes.
- Drain any excess fat from the skillet. Stir in the 2 cloves minced garlic and cook for 1 minute until fragrant.
- Add 2 tablespoons taco seasoning and 1/2 cup water to the beef mixture. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken.
- Stir in the 1 can (15 ounces) rinsed and drained black beans and heat through, about 2 minutes.
- Assemble the tostadas by spreading a layer of the beef and black bean mixture onto each of the 14 tostada shells. Top with diced avocado, salsa, and optional shredded cheddar cheese and chopped fresh cilantro.
- Serve immediately.
