Simple Beef Tostadas

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 1/2 pounds ground beef and 1/2 cup diced yellow onion. Cook, breaking up the beef with a spoon, until browned and no longer pink, about 7-8 minutes.
  2. Drain any excess fat from the skillet. Stir in the 2 cloves minced garlic and cook for 1 minute until fragrant.
  3. Add 2 tablespoons taco seasoning and 1/2 cup water to the beef mixture. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken.
  4. Stir in the 1 can (15 ounces) rinsed and drained black beans and heat through, about 2 minutes.
  5. Assemble the tostadas by spreading a layer of the beef and black bean mixture onto each of the 14 tostada shells. Top with diced avocado, salsa, and optional shredded cheddar cheese and chopped fresh cilantro.
  6. Serve immediately.
