Shrimp-Zucchini Skillet

  1. Place diced yellow potatoes, 1/2 cup water, and 1/4 teaspoon of the salt into a large deep skillet. Cover and steam over medium-high heat for 8 minutes until almost tender.
  2. Uncover the skillet and allow remaining water to evaporate, then add 1 tablespoon olive oil, sliced peeled zucchini, 1 teaspoon dried basil, 1/4 teaspoon black pepper, and the remaining 1/4 teaspoon salt.
  3. Sauté the vegetables for 3 minutes over medium-high heat until lightly golden and soft.
  4. Add the peeled shrimp to the skillet in an even layer. Sauté for 3 to 4 minutes, flipping once, until opaque, pink, and cooked through to an internal temperature of 145°F.
  5. Remove from heat, drizzle with 1 tablespoon fresh lemon juice, and garnish with 2 tablespoons chopped fresh parsley before serving.

Notes

Best enjoyed fresh from the skillet, while extra portions can be chilled for a light cold salad topper.
