Ingredients
- 1.5 pound shrimp (large, peeled and deveined)
- 2 tablespoon olive oil
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 18 tortillas (small corn or flour)
- 0.5 head red cabbage (shredded)
- 0.5 cup mayonnaise
- 0.25 cup sour cream
- 2 tablespoon lime juice
- 0.25 cup fresh cilantro (chopped)
- 2 can black beans (15 ounce each, rinsed and drained)
Instructions
- In a medium bowl, combine mayonnaise, sour cream, lime juice, and half of the chopped fresh cilantro. Stir well and set aside. This is your creamy slaw dressing.
- Add the shredded red cabbage to the bowl with the dressing and toss to combine. Let it sit for a few minutes while you prepare the shrimp to allow the flavors to meld.
- In another bowl, toss the shrimp with 1 tablespoon of olive oil, chili powder, cumin, garlic powder, salt, and black pepper until evenly coated.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
- While the shrimp cooks, warm the tortillas according to package instructions (microwave, dry skillet, or oven).
- In a small saucepan or microwave-safe bowl, warm the rinsed and drained black beans.
- To serve, spoon some of the creamy slaw into a warm tortilla, top with the cooked shrimp, a spoonful of warm black beans, and garnish with the remaining fresh cilantro.
Notes
Leftovers can be stored separately and assembled just before eating. This allows the slaw to remain crunchy. Kids can customize their tacos with their preferred amount of slaw, shrimp, and beans.
