Ingredients
- 1 pound shrimp (large, peeled, deveined)
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 0.5 teaspoon paprika
- 0.25 teaspoon cayenne pepper
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 bamboo skewers (6-inch, soaked in water for 15 minutes)
- 1 bunch collard greens (large, stems removed, leaves thinly sliced)
- 2 tablespoon apple cider vinegar
- 1 avocado (large, sliced)
Instructions
- In a medium bowl, combine the shrimp, 1/2 tablespoon of olive oil, lime juice, garlic powder, paprika, cayenne pepper, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss to coat and let marinate for 5 minutes.
- Thread the marinated shrimp onto the soaked bamboo skewers, typically 3-4 shrimp per skewer. You should have about 8 skewers.
- Heat the remaining 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp skewers and cook for 2-3 minutes per side, until the shrimp are pink and opaque.
- While the shrimp cook, add the thinly sliced collard greens to another skillet over medium heat. Add 2 tablespoons of water, cover, and steam for 3-4 minutes until softened. Uncover, add the apple cider vinegar and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté for another 2-3 minutes until the liquid has evaporated and greens are tender.
- Serve the shrimp skewers immediately alongside the sautéed collard greens and sliced avocado.
Notes
Don't overcook the shrimp, as they can become tough. They cook quickly.
