  1. In a medium bowl, combine the shrimp, 1/2 tablespoon of olive oil, lime juice, garlic powder, paprika, cayenne pepper, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss to coat and let marinate for 5 minutes.
  2. Thread the marinated shrimp onto the soaked bamboo skewers, typically 3-4 shrimp per skewer. You should have about 8 skewers.
  3. Heat the remaining 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp skewers and cook for 2-3 minutes per side, until the shrimp are pink and opaque.
  4. While the shrimp cook, add the thinly sliced collard greens to another skillet over medium heat. Add 2 tablespoons of water, cover, and steam for 3-4 minutes until softened. Uncover, add the apple cider vinegar and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté for another 2-3 minutes until the liquid has evaporated and greens are tender.
  5. Serve the shrimp skewers immediately alongside the sautéed collard greens and sliced avocado.

Notes

Don't overcook the shrimp, as they can become tough. They cook quickly.
