Shrimp Scampi with Whole Wheat Linguine

  1. Bring a large pot of lightly salted water to a boil. Add 12 ounces whole wheat linguine and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. While pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds raw shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. To the same skillet, add 4 cloves minced garlic and 1/2 teaspoon red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in 1/2 cup chicken broth and 2 tablespoons lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 cups fresh spinach and cook until wilted, about 1 minute.
  6. Return the cooked shrimp and linguine to the skillet. Toss everything together, adding a splash of the reserved pasta water if needed to create a light sauce. Garnish with chopped fresh parsley and serve immediately.

Notes

You can substitute chicken broth for white wine if you prefer. This dish is best served immediately as shrimp can overcook when reheated.
