Ingredients
- 4 ounce linguine pasta
- 0.5 tablespoon olive oil
- 1 tablespoon unsalted butter
- 0.75 pound shrimp (peeled, deveined, tails on or off)
- 3 clove garlic (minced)
- 0.25 cup dry white wine
- 0.25 cup chicken broth
- 0.5 lemon (half for juice)
- 0.25 teaspoon red pepper flakes
- 2 tablespoon fresh parsley (chopped, for garnish)
- 2 slice garlic bread (store-bought, for serving)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine pasta and cook according to package directions until al dente. Reserve 1/4 cup of pasta cooking water before draining.
- While the pasta cooks, heat 1/2 tablespoon of olive oil and 1 tablespoon of unsalted butter in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
- Add the minced garlic to the same skillet and cook for 30 seconds until fragrant, being careful not to burn it. Pour in the dry white wine and chicken broth, bringing it to a gentle simmer. Cook for 2-3 minutes to reduce slightly.
- Return the shrimp to the skillet. Stir in the juice from 1/2 a lemon and red pepper flakes if desired. Add the cooked and drained linguine to the skillet, along with a splash of the reserved pasta water to create a silky sauce. Toss everything to combine.
- Serve immediately, garnished with chopped fresh parsley. Toast the garlic bread according to package directions and serve alongside.
Notes
A good quality dry white wine (like Pinot Grigio) enhances the sauce, but chicken broth can be used as a substitute for a non-alcoholic option. Prepare garlic bread while pasta is cooking.
