Shrimp Scampi

  1. Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. While the pasta cooks, heat olive oil and butter in a large skillet or pan over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side, until pink and opaque. Remove shrimp from the pan and set aside.
  3. Add minced garlic and red pepper flakes to the same skillet. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
  4. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Return the cooked shrimp to the skillet. Add the drained spaghetti, chopped fresh parsley, kosher salt, and black pepper. Toss everything together, adding a splash or two of the reserved pasta water if needed to create a light sauce.
  6. Serve the Shrimp Scampi immediately. On the side, toss the mixed greens salad with Italian dressing.

Notes

Adjust the amount of red pepper flakes to your preferred spice level. A bit of freshly grated Parmesan cheese makes a nice optional topping.
