Ingredients
- 6 ounce spaghetti
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound shrimp (large, peeled, deveined)
- 3 clove garlic (minced)
- 0.5 teaspoon red pepper flakes
- 0.25 cup chicken broth
- 1 lemon (zested and juiced)
- 0.25 cup fresh parsley (chopped)
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 package mixed greens salad
- 2 tablespoon Italian dressing
Instructions
- Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
- While the pasta cooks, heat olive oil and butter in a large skillet or pan over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side, until pink and opaque. Remove shrimp from the pan and set aside.
- Add minced garlic and red pepper flakes to the same skillet. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Return the cooked shrimp to the skillet. Add the drained spaghetti, chopped fresh parsley, kosher salt, and black pepper. Toss everything together, adding a splash or two of the reserved pasta water if needed to create a light sauce.
- Serve the Shrimp Scampi immediately. On the side, toss the mixed greens salad with Italian dressing.
Notes
Adjust the amount of red pepper flakes to your preferred spice level. A bit of freshly grated Parmesan cheese makes a nice optional topping.
