Ingredients
- 1.5 pound turkey tenderloin (skinless)
- 1.25 pound baby red potatoes (halved)
- 1 pound green beans (trimmed)
- 2 tablespoon olive oil (extra virgin)
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and light grease a large sheet pan.
- In a small bowl, mix garlic powder, dried rosemary, dried thyme, salt, and black pepper.
- Toss halved baby red potatoes and trimmed green beans with 1 tbsp olive oil and half of the herb spice mixture on the sheet pan.
- Rub turkey tenderloin with remaining 1 tbsp olive oil and the rest of the herb mixture, placing it in the center of the sheet pan.
- Roast for 30 to 35 minutes until turkey reaches an internal temperature of 165°F and potatoes are tender.
- Slice turkey tenderloin and serve alongside roasted potatoes and green beans.
Notes
Let turkey rest for 5 minutes before slicing to retain moisture.
