  1. Preheat oven to 400°F. Line a large sheet pan with parchment paper for easier cleanup.
  2. In a large bowl, combine the smoked sausage, broccoli florets, bell peppers, and red onion.
  3. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, dried oregano, kosher salt, and black pepper. Toss well to ensure all ingredients are evenly coated.
  4. Spread the mixture in a single layer on the prepared sheet pan.
  5. Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender-crisp and lightly caramelized, and the sausage is heated through.
  6. Serve immediately with dinner rolls on the side.

Notes

If you like a little heat, add a pinch of red pepper flakes when seasoning the vegetables.
