- 1 pound smoked sausage (pre-cooked, cut into 1/2-inch thick rounds)
- 1 pound broccoli florets
- 2 bell peppers (medium, cored, chopped into 1-inch pieces)
- 1 red onion (medium, cut into wedges)
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon dried oregano
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 3 whole dinner rolls
Instructions
- Preheat oven to 400°F. Line a large sheet pan with parchment paper for easier cleanup.
- In a large bowl, combine the smoked sausage, broccoli florets, bell peppers, and red onion.
- Drizzle with olive oil, then sprinkle with garlic powder, onion powder, dried oregano, kosher salt, and black pepper. Toss well to ensure all ingredients are evenly coated.
- Spread the mixture in a single layer on the prepared sheet pan.
- Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender-crisp and lightly caramelized, and the sausage is heated through.
- Serve immediately with dinner rolls on the side.
Notes
If you like a little heat, add a pinch of red pepper flakes when seasoning the vegetables.
