- 1.5 pound smoked sausage (sliced into 1/2-inch rounds)
- 1.5 pound red potatoes (small, quartered)
- 2 bell peppers (cut into 1-inch pieces)
- 1 yellow onion (medium, cut into wedges)

- 1 teaspoon dried Italian seasoning

Instructions
- Preheat oven to 400°F. Line a large sheet pan with parchment paper for easy cleanup.
- In a large bowl, combine quartered red potatoes, bell pepper pieces, and yellow onion wedges. Drizzle with olive oil, then sprinkle with dried Italian seasoning, salt, and black pepper. Toss until everything is evenly coated.
- Spread the seasoned vegetables in a single layer on the prepared sheet pan. Roast for 10 minutes.
- After 10 minutes, remove the pan from the oven and add the sliced smoked sausage to the pan, distributing it evenly among the vegetables. Toss gently.
- Return the sheet pan to the oven and roast for another 10-12 minutes, or until the potatoes are tender and lightly browned, and the sausage is heated through. For picky eaters, the distinct components are easily served separately.
- Serve hot directly from the sheet pan.
Notes
To further speed up potato cooking, you can microwave the quartered potatoes for 5-7 minutes before tossing with oil and spices. This ensures they cook quickly alongside the sausage. Adjust seasoning to taste.
