  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet. Arrange corn tortillas in a single layer on the prepared baking sheet.
  2. In a medium bowl, combine rinsed and drained black beans, drained diced tomatoes, diced green bell pepper, finely diced red onion, ground cumin, chili powder, salt, and black pepper. Stir well.
  3. Spoon about 1/4 cup of the bean mixture over each tortilla, spreading it evenly. Using the back of a spoon, create a small well in the center of the bean mixture on each tortilla.
  4. Carefully crack one egg into each well. Sprinkle shredded cheddar cheese evenly over the tortillas, focusing around the eggs.
  5. Bake for 12-15 minutes, or until egg whites are set but yolks are still slightly runny. For firmer yolks, bake for a few extra minutes.
  6. Remove from oven and serve immediately with salsa and a sprinkle of chopped fresh cilantro.

Notes

You can prep the bean mixture ahead of time and store it in the refrigerator. Just assemble and bake on the day you plan to serve. Adjust chili powder for a milder or spicier dish.
