  1. Preheat oven to 400°F (200°C). In a large bowl, combine the 1 1/2 pounds of thinly sliced chicken breast, 2 thinly sliced bell peppers, and 1 thinly sliced yellow onion.
  2. Drizzle with 1 tablespoon olive oil. In a small bowl, mix 2 teaspoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Sprinkle this seasoning mixture over the chicken and vegetables, tossing to coat evenly.
  3. Spread the chicken and vegetables in a single layer on a large baking sheet lined with parchment paper.
  4. Roast for 18-20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp, stirring once halfway through.
  5. Warm the 8 small whole wheat tortillas according to package directions (microwave or pan).
  6. Serve the fajita mixture in the warm tortillas with optional toppings like 1/2 cup light shredded cheddar cheese, 1/4 cup salsa, and 1/2 cup shredded lettuce.

Notes

For spicier fajitas, add a pinch of cayenne pepper to the seasoning mix. This is a great family-friendly meal, as everyone can customize their own fajitas.
