Shanghai Sweet Soy Ground Beef

  1. Combine 1 1/2 cups jasmine rice and 3 cups water in a medium saucepan. Bring to a boil over high heat, cover with a tight-fitting lid, reduce heat to low, and cook for 15 minutes until liquid is absorbed and rice is tender.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook for 5 to 6 minutes, breaking into crumbles, until browned and cooked through to an internal temperature of 160°F.
  3. Add 3 cloves minced garlic, 1 tablespoon minced fresh ginger, 3 cups trimmed sugar snap peas, and 1 diced red bell pepper to the skillet with the beef. Sauté for 3 to 4 minutes until vegetables are crisp-tender.
  4. In a small bowl, stir together 1/4 cup reduced-sodium soy sauce, 2 tablespoons hoisin sauce, and 1 tablespoon toasted sesame oil. Pour over the beef and vegetables, tossing for 1 minute until evenly coated and bubbling.
  5. Fluff the cooked jasmine rice with a fork and divide among bowls. Spoon the beef and vegetable stir-fry over the rice and garnish with 2 tablespoons sliced green onions if desired.

Notes

Leftovers reheat exceptionally well in the microwave; add a splash of water to keep the jasmine rice moist.
