  1. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 finely diced yellow onion and cook until softened, about 3-4 minutes.
  2. Add the 14 ounces lean ground turkey to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
  4. Add 1/2 cup shredded carrots and 1/2 cup finely diced green bell pepper. Cook for 2-3 minutes until vegetables are tender-crisp.
  5. In a small bowl, whisk together 2 tablespoons coconut aminos, 1 tablespoon rice vinegar, 1/2 teaspoon ground ginger, and 1/4 teaspoon black pepper. Pour the sauce over the turkey mixture and toss to coat.
  6. Cook for another 1-2 minutes until the sauce has slightly thickened and heated through.
  7. Serve the turkey mixture immediately in large crisp lettuce leaves. Use two leaves per serving to form the 'cup'.
