- 14 corn tortillas (gluten-free)
- 2 English cucumbers (thinly sliced)
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat the olive oil in a large 12-inch deep skillet over medium heat. Add the diced yellow onion and red bell peppers, sautéing for 6 to 7 minutes until softened and lightly golden.
- Stir in the minced garlic, ground cumin, smoked paprika, 1 teaspoon of the kosher salt, and black pepper; cook for 1 minute until fragrant. Pour in both cans of crushed tomatoes, reduce heat to medium-low, and simmer gently for 5 minutes until sauce thickens slightly.
- Use the back of a spoon to create 8 small wells in the sauce. Crack an egg directly into each well. Cover the skillet with a lid and cook over medium-low heat for 6 to 8 minutes until the egg whites are set and yolks remain slightly soft.
- While eggs poach, toss the sliced English cucumbers with the remaining 1/2 teaspoon kosher salt in a serving bowl. Warm the corn tortillas in a dry skillet or microwave until soft and pliable.
- Remove the skillet from the heat, scatter crumbled feta cheese and chopped fresh parsley over the top, and serve immediately with the warm corn tortillas and cucumber salad.
Notes
Watch the skillet closely during the final 2 minutes of cooking so the egg yolks stay creamy to your liking.
