Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, grated fresh ginger, minced garlic, and sesame oil. Set aside.
  2. Pat salmon fillets dry with paper towels. Season both sides with salt and black pepper.
  3. Heat olive oil in a large non-stick skillet over medium-high heat. Once hot, add salmon fillets, skin-side down if applicable. Cook for 4-5 minutes per side, or until cooked through and easily flakes with a fork.
  4. While salmon cooks, microwave the white rice according to package directions. Steam the frozen green beans until tender-crisp, either in the microwave or on the stovetop.
  5. Pour the prepared sauce over the cooked salmon in the skillet. Let it simmer for 1-2 minutes, spooning sauce over the salmon, until the sauce slightly thickens.
  6. Serve salmon immediately with the sesame-ginger sauce, alongside microwave rice and steamed green beans. Garnish with sesame seeds, if desired.

Notes

Cooking rice and steaming vegetables simultaneously with the salmon ensures this meal comes together quickly. Adjust ginger and garlic to your taste.
