  1. In a small pot, combine the jasmine rice, water, and 1/4 teaspoon of the salt. Bring to a boil over high heat, cover with a tight lid, reduce heat to low, and cook for 15 minutes until tender.
  2. In a small bowl, whisk together the gluten-free tamari, brown sugar, minced fresh ginger, and 2 cloves of the minced garlic.
  3. Heat 1/2 tablespoon of the toasted sesame oil in a large skillet over medium-high heat. Add the ground beef and cook for 6 minutes, breaking it into small crumbles, until fully browned and reaching an internal temperature of 160°F.
  4. Pour the tamari sauce mixture over the cooked ground beef and simmer for 2 minutes until glossy and well coated, then remove the beef to a plate.
  5. In the same skillet, add the remaining 1/2 tablespoon of toasted sesame oil, the remaining 1 clove of minced garlic, the baby bok choy, and the remaining 1/4 teaspoon of salt. Sauté for 3 to 4 minutes until the greens are tender-crisp.
  6. Fluff the jasmine rice and portion into bowls. Top with the savory beef and sautéed bok choy, finishing with sliced green onions.
