- 0.5 cup brown rice (uncooked)
- 1 tablespoon sesame oil
- 12 ounce chicken breast (boneless, skinless, thinly sliced)
- 1 tablespoon garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 cup mixed stir-fry vegetables
- 0.25 cup soy sauce
- 2 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 0.25 teaspoon red pepper flakes
- 1 tablespoon sesame seeds
Instructions
- Cook brown rice according to package directions. Keep warm.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, and optional red pepper flakes to create the stir-fry sauce. Set aside.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add thinly sliced chicken breast and cook for 3-5 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from skillet and set aside.
- Add minced garlic, grated fresh ginger, and mixed stir-fry vegetables to the same skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- Return the cooked chicken to the skillet. Pour the prepared stir-fry sauce over the chicken and vegetables. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened and coats everything evenly.
- Serve immediately over the warm brown rice, garnished with sesame seeds if desired.
Notes
For even quicker preparation, use a bag of pre-cut stir-fry vegetables. Adjust honey or red pepper flakes to taste.
