- 2 poblano peppers (medium, seeded and sliced thin)

- 1 teaspoon garlic powder

- 1 can black beans (15 oz can, drained and rinsed)
- 2 package microwave brown rice (8.5 oz pouch, heated per package directions)
- 0.25 cup fresh cilantro (chopped)
- 1 lime (medium, cut into wedges)
Instructions
- Season sliced beef top sirloin steak with smoked paprika, garlic powder, black pepper, and 1/2 teaspoon kosher salt.
- Heat 1/2 tablespoon olive oil in a large skillet over high heat until shimmering. Add seasoned steak in a single layer and sear without moving for 2 minutes, then stir and cook 1 to 2 minutes more until browned with an internal temperature reaching 145°F for medium. Transfer steak to a warm plate.
- Add remaining 1/2 tablespoon olive oil to the skillet over medium-high heat. Add sliced poblano pepper, red onion, and remaining 1/2 teaspoon kosher salt. Cook for 4 to 5 minutes, stirring frequently, until peppers are tender and charred at the edges.
- Heat microwave brown rice according to package directions. In a medium bowl, fold warmed brown rice with drained black beans and chopped fresh cilantro.
- Toss seared steak and any resting juices back into the skillet with the poblano peppers for 30 seconds. Divide cilantro-black bean rice among four plates, top with steak and charred peppers, and serve with lime wedges.
Notes
Cooking the steak over very high heat ensures a deep sear without overcooking the lean sirloin.
