  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 yellow onion and 2 bell peppers; sauté for 3-4 minutes until slightly softened.
  2. Add the 1 pound ground pork to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes, until browned. Drain any excess fat.
  3. Stir in the 2 cloves garlic, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  4. Add the 2 cans cannellini beans and 2 cups spinach to the skillet. Cook for 2-3 minutes, stirring until the spinach wilts and the beans are heated through.
  5. While the skillet is cooking, prepare 1 1/2 cups quick-cook brown rice according to package directions.
