  1. In a medium bowl, whisk together the low-sodium soy sauce, rice vinegar, 1/2 teaspoon of the sesame oil, and cornstarch. Add the thinly sliced pork tenderloin and toss to coat. Let marinate for 5-7 minutes while you prepare other ingredients.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated fresh ginger and cook for 30 seconds until fragrant.
  3. Add the marinated pork tenderloin to the skillet, shaking off excess marinade (reserve the marinade). Sear for 2-3 minutes per side until lightly browned and cooked through. Remove pork from the skillet and set aside.
  4. Add the broccoli florets to the hot skillet with a splash of water (about 1 tablespoon) if needed. Cover and steam for 3-4 minutes, or until tender-crisp. Uncover, stir in the remaining 1/2 teaspoon sesame oil, and season with salt and black pepper.
  5. While the broccoli cooks, prepare the microwaveable jasmine rice according to package directions. You can heat both pouches in the microwave simultaneously.
  6. Return the pork to the skillet. Pour in the reserved marinade and cook for 1 minute, stirring constantly, until the sauce thickens and coats the pork and broccoli.
  7. Serve immediately over the warm jasmine rice. Garnish with fresh cilantro if desired.
