- 2 pork chops (boneless, about 3/4 inch thick)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 0.25 cup chicken broth
- 1 tablespoon lemon juice
- 0.5 teaspoon dried oregano
- 6 ounce fresh green beans (trimmed)
- 1 tablespoon butter
- 0.5 cup couscous (quick-cooking)
- 0.5 cup water (hot)
Instructions
- Pat the pork chops dry with paper towels. Season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4-6 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F). Remove pork chops from the skillet and set aside on a plate, tented with foil.
- In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Pour in the chicken broth, lemon juice, and dried oregano, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 1-2 minutes until slightly reduced. Remove from heat.
- While the sauce simmers, in a separate small pot or microwave-safe bowl, combine the quick-cooking couscous and 1/2 cup of hot water. Cover and let stand for 5 minutes, then fluff with a fork.
- Steam or boil the trimmed fresh green beans until tender-crisp, about 5-7 minutes. Drain and toss with 1 tablespoon of butter and a pinch of salt and pepper.
- Serve the seared pork chops with the lemon-garlic pan sauce, buttered green beans, and couscous.
Notes
Ensure pork chops are not overcooked to keep them tender. The internal temperature for cooked pork should reach 145°F for safety.
