Ingredients
- 8 ounce shrimp (large, peeled and deveined)
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon black pepper
- 0.5 teaspoon salt
- 0.5 lemon (juiced)
- 1 zucchini (medium, spiralized into noodles)
- 0.5 cup cherry tomatoes (halved)
- 1 cup fresh spinach
- 1 tablespoon fresh parsley (chopped)
Instructions
- Pat the shrimp dry with paper towels. In a medium bowl, toss shrimp with 1/2 tablespoon olive oil, minced garlic, dried oregano, 1/4 teaspoon black pepper, and 1/4 teaspoon salt. Let marinate for 5 minutes while preparing the zucchini and tomatoes.
- Heat the remaining 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
- Add the zucchini noodles, cherry tomatoes, and fresh spinach to the same skillet. Cook for 3-5 minutes, tossing occasionally, until spinach is wilted and zucchini is tender-crisp. Season with remaining 1/4 teaspoon salt and a pinch of black pepper.
- Return the cooked shrimp to the skillet. Squeeze lemon juice over the top and toss to combine. Serve immediately, garnished with fresh parsley if desired.
Notes
Leftovers are best enjoyed the next day. Zucchini noodles can become watery if reheated too much; if preparing ahead, consider cooking noodles just before serving.
