- 4 ounce salmon fillet (skinless)

- 1 ounce rice vermicelli noodles
- 0.25 cup cucumber (julienned)
- 0.25 cup carrot (julienned)

- 1 tablespoon lime juice
- 0.5 tablespoon fish sauce
Instructions
- Pat the salmon fillet dry. In a small bowl, mix 1/2 teaspoon grated fresh ginger, 0.5 clove minced garlic, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Rub this mixture over the salmon.
- Heat 1 teaspoon olive oil in a small non-stick skillet over medium-high heat. Once hot, sear the salmon for 4-5 minutes per side, or until cooked through and lightly golden. Remove from skillet and set aside.
- While salmon cooks, prepare the rice vermicelli noodles according to package directions. Drain well and rinse with cold water to prevent sticking.
- In a medium bowl, combine 1/4 cup julienned cucumber, 1/4 cup julienned carrot, and 1/2 tablespoon fresh chopped cilantro. Add the cooked and cooled rice vermicelli.
- Prepare the dressing: In a small bowl, whisk together 1 tablespoon lime juice and 1/2 tablespoon fish sauce. Pour the dressing over the noodle salad and toss gently to combine.
- Serve the seared salmon alongside the noodle salad.
Notes
For best texture, serve the noodles immediately after dressing.
