Seared Ginger Salmon with Noodle Salad

  1. Pat the salmon fillet dry. In a small bowl, mix 1/2 teaspoon grated fresh ginger, 0.5 clove minced garlic, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Rub this mixture over the salmon.
  2. Heat 1 teaspoon olive oil in a small non-stick skillet over medium-high heat. Once hot, sear the salmon for 4-5 minutes per side, or until cooked through and lightly golden. Remove from skillet and set aside.
  3. While salmon cooks, prepare the rice vermicelli noodles according to package directions. Drain well and rinse with cold water to prevent sticking.
  4. In a medium bowl, combine 1/4 cup julienned cucumber, 1/4 cup julienned carrot, and 1/2 tablespoon fresh chopped cilantro. Add the cooked and cooled rice vermicelli.
  5. Prepare the dressing: In a small bowl, whisk together 1 tablespoon lime juice and 1/2 tablespoon fish sauce. Pour the dressing over the noodle salad and toss gently to combine.
  6. Serve the seared salmon alongside the noodle salad.

For best texture, serve the noodles immediately after dressing.
