  1. Pat cod fillets dry with paper towels and season evenly with 1/8 teaspoon salt and 1/8 teaspoon black pepper.
  2. Heat avocado oil in a large non-stick skillet over medium-high heat. Add cod fillets and sear for 3-4 minutes per side, until golden brown and cooked through. Remove cod from skillet and set aside.
  3. Melt butter in the same skillet over medium heat. Add frozen green beans and finely chopped red bell pepper. Sauté for 5-7 minutes, until tender-crisp.
  4. Stir in apple cider vinegar, dried dill, remaining 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Cook for 1 minute more, allowing liquid to slightly reduce.
  5. Serve the seared cod alongside the dill green beans.

Notes

Be careful not to overcook the cod; it cooks quickly. You can add a splash of water to steam the green beans if they aren't tender enough.
