- 2 tablespoon butter
- 1 tablespoon avocado oil
- 16 ounce green beans (frozen)
- 2 tablespoon apple cider vinegar

Instructions
- Pat cod fillets dry with paper towels and season evenly with 1/8 teaspoon salt and 1/8 teaspoon black pepper.
- Heat avocado oil in a large non-stick skillet over medium-high heat. Add cod fillets and sear for 3-4 minutes per side, until golden brown and cooked through. Remove cod from skillet and set aside.
- Melt butter in the same skillet over medium heat. Add frozen green beans and finely chopped red bell pepper. Sauté for 5-7 minutes, until tender-crisp.
- Stir in apple cider vinegar, dried dill, remaining 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Cook for 1 minute more, allowing liquid to slightly reduce.
- Serve the seared cod alongside the dill green beans.
Notes
Be careful not to overcook the cod; it cooks quickly. You can add a splash of water to steam the green beans if they aren't tender enough.
