Ingredients
- 2 pound Arctic char fillet (skinless, cut into 6 portions)
- 2 can no-salt-added black beans (rinsed and drained)
- 1.5 pound baby zucchini (sliced into 1/2-inch half-moons)
- 2 tablespoon grapeseed oil
- 1 teaspoon chipotle chili powder
- 0.5 teaspoon ground cinnamon
- 0.5 teaspoon red pepper flakes
- 0.25 teaspoon sea salt flakes
Instructions
- Season the Arctic char fillets on all sides with chipotle chili powder, ground cinnamon, and sea salt flakes.
- In a small saucepan over medium-low heat, combine the rinsed black beans, red pepper flakes, and 3 tablespoons of water; heat gently for 6 minutes until warmed through.
- Heat 1 tablespoon of grapeseed oil in a 12-inch skillet over medium-high heat. Add sliced baby zucchini and sauté for 5 minutes until tender and lightly browned; transfer zucchini to a serving platter.
- Add remaining 1 tablespoon of grapeseed oil to the skillet over medium-high heat. Place Arctic char fillets in the skillet and sear for 3 to 4 minutes per side until the fish flakes easily at 145°F.
- Spoon seasoned black beans onto plates, top with sautéed zucchini, and place a seared Arctic char fillet on top.
Notes
Rinsing canned beans thoroughly removes excess surface starch and lowers sodium content.
