Ingredients
- 1 pound ground chicken
- 0.25 cup panko breadcrumbs
- 1 egg (large)
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 2 sweet potatoes (medium, peeled and diced)
- 0.5 pound fresh green beans (trimmed)
Instructions
- Preheat oven to 400°F (200°C). In a medium bowl, combine the ground chicken, panko breadcrumbs, egg, garlic powder, onion powder, 1/2 teaspoon of the salt, and 1/8 teaspoon of the black pepper. Mix gently until just combined, then form into 4 patties.
- On a baking sheet, toss the diced sweet potatoes and green beans with the remaining 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1 tablespoon olive oil. Spread in a single layer and roast for 15-20 minutes, or until tender and slightly caramelized, flipping halfway through.
- While vegetables are roasting, heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Once hot, carefully place the chicken patties in the skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C).
- Serve the seared chicken patties immediately with the roasted sweet potatoes and green beans.
