Seared Beef and Broccoli with Rice

  1. Combine beef strips, 2 tablespoons soy sauce, 1/2 teaspoon fresh ginger, and 1 teaspoon sesame oil in a bowl. Toss to coat and set aside while prepping other ingredients.
  2. Cook instant white rice according to package instructions (typically 5 minutes) and keep warm.
  3. Whisk together the remaining 2 tablespoons soy sauce, 1 tablespoon cornstarch, 1 tablespoon brown sugar, and remaining 1/2 teaspoon fresh ginger to create the sauce. Set aside.
  4. Heat 2 teaspoons vegetable oil in a large skillet or wok over high heat. Add the beef and sear quickly until browned, about 3 minutes. Remove beef and set aside, leaving oil in the pan.
  5. Add the broccoli florets and 1/4 cup water to the skillet. Cook until bright green and slightly tender-crisp, about 3-5 minutes, stirring occasionally.
  6. Return the beef to the pan. Pour the prepared sauce over the beef and broccoli, stirring constantly until the sauce thickens and coats the ingredients, about 1 minute. Remove from heat and stir in the remaining 1 teaspoon sesame oil. Serve immediately over the cooked rice.

Notes

If using frozen broccoli, add a few extra minutes of steaming time to ensure they cook properly. Slicing the beef thin is key to achieving a sub-30 minute cooking time.
