Instructions
- In a medium bowl, combine 5 ounces beef sirloin steak, 1 tablespoon soy sauce, and 1 teaspoon cornstarch. Toss to coat and set aside to marinate for at least 5 minutes.
- Meanwhile, prepare 1 cup instant jasmine rice according to package directions.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and sear for 2-3 minutes per side, until browned. Remove beef from the skillet and set aside.
- In the same skillet, add 1/2 each red bell pepper and 1/2 each yellow bell pepper, 1 clove minced garlic, and 1 teaspoon grated fresh ginger. Stir-fry for 3-4 minutes, until peppers are tender-crisp.
- In a small bowl, whisk together 1/4 cup beef broth, 1 teaspoon sesame oil, and 1/2 teaspoon sugar for the stir-fry sauce.
- Return the seared beef to the skillet with the vegetables. Pour the stir-fry sauce over everything and cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly.
- Serve the seared beef and bell pepper stir-fry immediately over the cooked jasmine rice, garnished with 1 tablespoon chopped fresh green onion if desired.
Notes
To ensure crispy beef, do not overcrowd the pan. Cook in batches if necessary. Adjust soy sauce for desired saltiness.
