Ingredients
- 2 eggs (large)
- 1 tablespoon milk
- 0.25 cup diced ham (pre-cooked)
- 0.25 cup shredded cheddar cheese
- 1 tablespoon butter
- 1 cup frozen hash browns (shredded or diced)
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- In a bowl, whisk together 2 large eggs and 1 tablespoon milk. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a non-stick skillet over medium-high heat. Add frozen hash browns and cook, stirring occasionally, for 8 to 10 minutes, or until golden brown and crispy. Season with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Remove from skillet and keep warm.
- Melt 1 tablespoon butter in the same non-stick skillet over medium heat.
- Pour in the egg mixture. As the eggs begin to set, gently push them from the edges to the center with a spatula.
- When the eggs are mostly set but still slightly wet, sprinkle in diced pre-cooked ham and shredded cheddar cheese. Continue to cook, stirring gently, until eggs are fully cooked and cheese is melted. Season with remaining 1/8 teaspoon salt and 1/8 teaspoon black pepper to taste.
- Serve the scrambled eggs with cheesy ham alongside the crispy hash browns.
Notes
Using pre-cooked ham and frozen hash browns significantly cuts down on prep time.
