Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart, until browned, about 5 minutes. Drain any excess fat.
- Add 1/2 diced yellow onion to the skillet and cook until softened, about 3 minutes.
- Stir in 2 minced garlic cloves, 1/2 teaspoon dried oregano, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Add 5 ounces fresh baby spinach and 1/4 cup water or no-salt-added vegetable broth. Cover and cook until spinach is wilted, about 3-4 minutes.
- Stir everything together until well combined. Serve the turkey and spinach mixture with 2 cups cooked brown rice, dividing evenly into 4 portions.
