- 0.5 pound ground pork
- 0.5 yellow onion (chopped)
- 1 can chickpeas (15-ounce, rinsed and drained)
- 0.5 cup vegetable broth
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon kosher salt
- 0.125 teaspoon black pepper (freshly ground)
- 0.5 cup quick-cooking couscous (uncooked)
- 0.5 cup hot water (hot)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1/2 pound ground pork and 1/2 yellow onion. Break up the pork with a spoon and cook for 5-7 minutes, until pork is browned and onion is softened.
- Drain any excess fat from the skillet. Stir in the 1 can chickpeas, 1/2 cup vegetable broth, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Bring to a simmer and cook for 3-5 minutes, allowing flavors to meld.
- While the medley simmers, prepare the 1/2 cup quick-cooking couscous. Place couscous in a small bowl, pour 1/2 cup hot water over it, cover, and let stand for 5 minutes, or until all liquid is absorbed and couscous is fluffy.
- Fluff the couscous with a fork. Stir 2 tablespoons chopped fresh cilantro into the pork and chickpea medley just before serving, if using.
- Serve the sautéed pork and chickpea medley immediately over the fluffy couscous.
Notes
This dish stores and reheats well, making it suitable for lunch the next day. A squeeze of fresh lime juice at the end can brighten the flavors.
