  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced pork loin and cook for 5-7 minutes, stirring occasionally, until browned on all sides. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Remove pork from skillet and set aside, leaving rendered fat in the pan.
  2. Add the diced sweet potato, diced yellow onion, and diced red bell pepper to the skillet. Cook for 7-8 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Stir in the minced garlic, 1/2 teaspoon smoked paprika, and 1/4 teaspoon ground cumin. Cook for 1 minute more until fragrant.
  4. Pour in 1/2 cup chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Return the cooked pork to the skillet.
  5. Reduce heat to medium-low, cover, and let simmer for 5-7 minutes, or until sweet potatoes are tender. Season with additional salt and black pepper to taste.
  6. Remove from heat, sprinkle with 1/2 cup shredded cheddar cheese, and cover briefly until the cheese is melted, about 1-2 minutes. Serve hot.

Notes

Leftovers can be reheated in a skillet or microwave, but fresh is best for this hash.
