Ingredients
- 1.5 pound ground beef (85/15 lean)
- 1 tablespoon olive oil
- 1 yellow onion (large, diced)
- 1 red bell pepper (diced)
- 4 clove garlic (minced)
- 1.5 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 0.5 teaspoon cinnamon
- 1.5 pound small red potatoes (diced into 1/2-inch pieces)
- 1 can canned diced tomatoes
- 0.5 cup beef broth
- 0.25 cup fresh parsley (chopped)
- 1 package flatbreads (small package, for serving)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion, red bell pepper, and diced small red potatoes to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
- Stir in the minced garlic, ground cumin, paprika, ground coriander, and cinnamon; cook for 1 minute more until fragrant.
- Add the canned diced tomatoes (undrained) and beef broth to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 5-7 minutes, or until potatoes are tender. Season with remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Stir in the chopped fresh parsley just before serving.
- Serve the Moroccan ground beef and potatoes hot with warm flatbreads.
Notes
If you enjoy a bit of spice, add a pinch of cayenne pepper with the other spices.
