Sautéed Moroccan Ground Beef and Potatoes

  1. Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the diced yellow onion, red bell pepper, and diced small red potatoes to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Stir in the minced garlic, ground cumin, paprika, ground coriander, and cinnamon; cook for 1 minute more until fragrant.
  4. Add the canned diced tomatoes (undrained) and beef broth to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 5-7 minutes, or until potatoes are tender. Season with remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  5. Stir in the chopped fresh parsley just before serving.
  6. Serve the Moroccan ground beef and potatoes hot with warm flatbreads.

Notes

If you enjoy a bit of spice, add a pinch of cayenne pepper with the other spices.
