  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the broccoli florets and sliced cremini mushrooms. Sauté for 5-7 minutes until tender-crisp. Remove vegetables from the skillet and set aside.
  2. Add the lean ground beef to the hot skillet and break it apart. Cook for 5-7 minutes, until browned. Drain any excess fat, if necessary.
  3. Add the thinly sliced yellow onion, minced garlic, and minced fresh ginger to the skillet with the beef. Cook for 2-3 minutes, until fragrant.
  4. Stir in the coconut aminos, rice vinegar, and black pepper. Bring to a simmer, then return the cooked broccoli and mushrooms to the skillet. Toss everything together to coat and heat through for 2 minutes.
  5. Remove from heat, drizzle with sesame oil, and toss gently. Serve immediately. Garnish with sliced green onions, if desired. Portion remaining servings into airtight containers for easy meal prep later in the week.

Notes

This dish reheats well and can be stored in the refrigerator for up to 3 days. Adjust red pepper flakes to taste if you prefer a hint of heat.
