Instructions
- In a large deep skillet or Dutch oven over medium-high heat, cook the Italian pork sausage and diced yellow onion for 6 minutes, breaking the meat apart with a spoon until fully browned and reaching an internal temperature of 160°F.
- Pour in the canned crushed tomatoes, chicken broth, uncooked penne pasta, dried Italian seasoning, and salt. Stir well to submerge the pasta.
- Bring to a vigorous boil, then cover with a lid, reduce heat to medium-low, and simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
- Uncover and stir in the baby spinach until completely wilted into the sauce.
- Sprinkle the shredded mozzarella cheese evenly over the top, cover for 2 minutes until the cheese is melted and bubbling, then serve.
