Sausage and White Bean Skillet

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced smoked kielbasa and cook until lightly browned, about 5 minutes. Remove sausage from skillet and set aside.
  2. Add the chopped yellow onion to the skillet and cook until softened, about 4 minutes. Stir in the 2 minced garlic cloves and 1 tablespoon smoked paprika, cooking for 1 minute until fragrant.
  3. Stir in the cannellini beans, the can of fire roasted diced tomatoes (undrained), 1/2 cup chicken broth, and 1/2 teaspoon kosher salt. Bring mixture to a simmer.
  4. Return the cooked sausage to the skillet. Reduce heat to low and simmer, uncovered, for 5 minutes to allow flavors to meld. Stir in the baby spinach until wilted, about 1 minute.
  5. While simmering, lightly toast the 2 pieces of crusty bread with the remaining 1 tablespoon olive oil and 1/4 teaspoon kosher salt. Serve the bean mixture hot with the toasted bread for soaking up the sauce.

Notes

You can substitute fire-roasted tomatoes with regular diced tomatoes, but you lose a little of the smoky depth. Ensure the beans are thoroughly rinsed to remove excess sodium.
