  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 sliced medium yellow onion, 1 sliced green bell pepper, and 1 sliced red bell pepper. Sauté for 5-7 minutes until vegetables are tender-crisp.
  2. Add 12 ounces pre-cooked Italian sausage rounds to the skillet with the vegetables. Cook for 3-5 minutes, stirring occasionally, until sausage is heated through and slightly browned.
  3. Stir in 1/2 cup marinara sauce, 1/2 teaspoon dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a gentle simmer and cook for 2-3 minutes, allowing flavors to meld. Keep warm.
  4. While the sausage and peppers simmer, prepare the polenta: Bring 2 cups water or milk to a boil in a medium saucepan. Slowly whisk in 1/2 cup quick-cooking polenta. Reduce heat to low and cook, whisking frequently, for 3-5 minutes until thickened and creamy. Stir in 1/4 cup shredded Parmesan cheese.
  5. Serve the sausage and peppers directly from the skillet over the creamy polenta.

Notes

Any type of bell pepper can be used based on your preference. Leftovers are delicious and reheat well in the microwave.
